On Sunday, July 14, Al posted this heartwarming snap on his Instagram page. Nick, who is currently juggling his college studies, makes it a point to visit his family often. Fans of Al's Instagram page know that one of his greatest joys is cooking breakfast for his son. Back on June 27, Al posted a picture of a delightful meal he prepared for Nick to start the day right. “Breakfast for my boy, Nick,” he captioned the post, showcasing his culinary talents.
“Al, you are the best Dad to your son,” one follower remarked, highlighting the admiration fans have for Al’s parenting style. Another added, “Love that you do this for him…..making memories.” It’s clear that these moments are cherished by both father and son, creating lasting memories in the process.
This past weekend, Al took to Instagram again to share more of his weekend with Nick. “Nick and I got upstate last night and stopped at the @chathamfarmersmkt picked up some #sunflowers and then got home and made crabcakes. Perfect end to a Friday,” he wrote in a caption on Saturday, July 13. Alongside this heartfelt message, he shared a photo of the sunflowers they picked and a glimpse of their dinner. The crabcakes looked absolutely mouthwatering, showing just how much Al loves to cook and share these experiences with his family.
Speaking of cooking, Al has always been passionate about it, and this passion is evident in his upcoming cookbook, Al Roker’s Recipes to Live By, which he co-wrote with his eldest daughter, Courtney Roker Laga. Al told TODAY.com, “This is truly a labor of love to be able to create a record and a cookbook with my daughter Courtney of all the recipes that mean the most to me and my family. And, bonus: She did all the work!”
Courtney, 37, added, “In this book, you can expect to find recipes that we personally cherish, whether they were passed down in our family or discovered during our culinary adventures together. We’ve poured our hearts into crafting dishes that reflect our shared love for cooking and our cultural heritage.”
One of Al's favorite summer dishes from his childhood is a slightly sweet yet tangy macaroni salad. He fondly remembers, “My mother made this often, especially for family gatherings. A picnic essential, it was a staple when the Roker clan took a day trip to Rockaway Beach. I can remember the sun on my back, the sand beneath my feet, the sound of the waves crashing on the shore, and eating my macaroni salad with lightning speed because my mother was convinced it spoiled within five seconds of being exposed to the sun.”
